I have a confession. I am in love with eggplants. They are so purple and pretty on the outside, and have such an exciting texture on the inside. When baked, they get a sort of creamy taste to them. And they are filling, which makes them a great alternative to eating meat all the time!<br />

You can add cheese at the end, to make it even more filling (I am lactose intolerant, and I have yet to find cheese that I fully enjoy). </span><br />

Scoop out insides, but not too much so it doesn't collapse. Finely chop the insides of the eggplant, and put in medium sized bowl. </span></span></li>

Divide mixture between the two eggplant boats, lightly drizzle with olive oil. </span></span></li>

<li style="margin: 0px 0px 0.25em; padding: 0px;">Meanwhile put the cheese in tinfoil, closed tightly. Put it on a pan (makes the cleanup easier, just in case). Put in an oven heated to 350F (175C), for about 20-22 minutes.</li>
<li style="margin: 0px 0px 0.25em; padding: 0px;">When both the cauliflower and the potatoes are done, mix together in a blender (remove the skin of the potato first! ). Add some of the cooking water if needed. </li>
<li style="margin: 0px 0px 0.25em; padding: 0px;">In a saucepan cook rosemary leaves on medium-low in the olive oil, just until fragrant, about 5 minutes. </li>
<li style="margin: 0px 0px 0.25em; padding: 0px;">Add apples, turn up the heat to medium-high so the apples turn a crispy red. </li>
<li style="margin: 0px 0px 0.25em; padding: 0px;">Put everything on a plate, and drizzle with honey! Lovely. </li>

<li style="margin: 0px 0px 0.25em; padding: 0px;">Add the tomato paste and oregano to the pot, and raise the heat to medium-low, stirring frequently so it doesn't burn. Slowly add one cup water and mix well. </li>
<li style="margin: 0px 0px 0.25em; padding: 0px;">Once your mixture starts to boil, add garlic, mussels, chopped tomatoes and the basil leaves. Mix well, and put the lid on. </li>

You have two options: either roughly chop it up, and add to the pot, or leave in whole, and put it in a tea strainer, then put in the pot. I prefer the latter option, because this way the parsley doesn't end up swimming around in the soup, but you still get the flavor of it. </li>

After about 10 minutes add about 4 cups water (or 1 Liter). You can add more, depending on how much soup you want. Bring to a boil, uncovered. </li>

Finely chop the onion and the garlic* (see my note on garlic below), and add to the meat. Add salt, pepper, paprika, and the egg. Mix well. </li>

With wet hands form small, bite-size balls, and add to the boiling soup. They should be done after 10-12 minutes, but take one out, and check, just to be sure. </li>

<li>Cook your rice in the milk until tender. Add a pinch of salt, a pinch of sugar, and a teaspoon of vanilla extract. When done, set aside, and let cool, stirring occasionally, so your rice doesn't dry out. </li>
<li>Once the rice has relatively cooled down, preheat your oven to 340F (170C)</li>
<li>In a mixer combine egg yolks, butter, sugar, lemon juice, and remaining vanilla extract. Mix until light and fluffy. </li>
<li>Beat the egg whites until firm. You can add a pinch of salt to it, it can make it easier. </li>
<li>With a spatula mix together well the rice and the buttery-sugary mixture. Make sure there are no balls of rice stuck together. </li>
<li>Now gently mix in the egg whites. </li>
<li>Pour the mixture in a greased and then floured pan, and send it in the oven! </li>
<li>After about an hour, when the top of your cake is golden brown, check with a sharp knife if it is done yet (stab it in the middle, and if it comes out fairly dry, it's ready). </li>
<li>Serve cold or warm, with jam or chocolate syrup, or with a spoon of vanilla ice cream. Enjoy! :) </li>

You can spritz your apples with some lemon juice, to prevent them from turning brown. </span></span></li>

Why is this good for you? For starters, it will make your tummy feel great. Apple cider vinegar is especially healthy for you, it is a wonderful home-remedy. It is good for (among many other things) fighting acne, acid reflux, high cholesterol, a bad hangover (trust me), and fatigue. Second, zucchini is another good source of dietary fiber, potassium, manganese, zinc, and iron, and vitamins A, B-complex, and C. <li>Prepare your eggplant: wash skin thoroughly, dry, and cut into </li>
<li>1/4 inch to 1/2 inch slices. put in a bowl, and lightly salt. You want to get out some of the water, so it won't be too soggy. Set aside for about 20 minutes. While waiting, you can make your own <a href="http://pinchofpixidust.blogspot.com/2011/10/tomato-sauce.html">tomato sauce</a>. </li>
<li>Once you see that your eggplant slices have started sweating, pat dry, and get ready to fry! </li>
<li>Set your frying station: from left to right, have the breadcrumbs, eggs, flour, and the eggplant. In a pan heat up your oil in the oven, to around 200C=390F. Start coating your eggplants, starting with the flour, then eggs, and then with the breadcrumbs. Put in the pan, and send it in the oven. I like doing it in the oven because this way the whole house won't smell of oil. Fry each slice until both sides are golden brown, then put on paper towels and let cool. </li>
<li>Cook the pasta of your choice, al dente, and drain. Meanwhile, you can wash the dirty dishes, so you don't have to worry about as much after you're done cooking. </li>
<li>In an oven-safe dish pile the pasta, 2/3rd of the sauce, fried eggplant, remaining of sauce, and both cheeses. Send it in the oven, and bake at 200C=390F until cheese starts bubbling with joy, around 10 minutes. Serve while still hot. Enjoy your masterpiece! </li>

<li>Put water in a teapot to boil. While the water boils, wash your tomatoes and make a cross on their skin. Pour the boiling water on your tomatoes, and let them stand for a couple of minutes. By doing this, you basically undress your tomatoes. </li>
<li>In a medium saucepan simmer the garlic with the olive oil over medium heat. </li>
<li> Now peel the tomatoes, and roughly chop them in with the garlic and olive oil in the sauce pan. Increase the heat. Stirring frequently, cook until tomatoes are sauce-like. You can leave it chunky, or cook longer, for a thicker sauce. </li>
<li>Add your spices, and that's it! </li>

Pour this sauce over Eggplant Parm, use it as sauce for Home made Pizza, or pour over pasta, for a fresh alternative to the store-bought tomato sauces. Experiment with different spices and quantities. For pasta sauce I like to add onions as well (<i>step 2</i>), and I substitute basil for sage. You can also stir in grated Parmesan cheese (<i>step4</i>), for a thicker, more rich sauce. Whatever you do, <b>have fun with it</b>! </div>

Why make this at home, instead of buy it by the can? Simple: because at least you know exactly what you put in it. It is healthier because there will be no preservatives, just fresh ingredients.
