Grilled Brie with Rosemary Apples, Cauliflower Puree and honey



Ingredients (for two): 

  • 1 brie cheese of your liking
  • 1 tbsp olive oil
  • small handful of rosemary leaves
  • 1 apple
  • 1 head of cauliflower
  • 1.5 pounds of potatoes
  • honey


  1. Cook cleaned cauliflower in lightly salted boiling water 
  2. Cook potatoes in lightly salted boiling water
  3. Meanwhile put the cheese in tinfoil, closed tightly. Put it on a pan (makes the cleanup easier, just in case). Put in an oven heated to 350F (175C), for about 20-22 minutes.
  4. When both the cauliflower and the potatoes are done, mix together in a blender (remove the skin of the potato first! ). Add some of the cooking water if needed. 
  5. In a saucepan cook rosemary leaves on medium-low in the olive oil, just until fragrant, about 5 minutes. 
  6. Add apples, turn up the heat to medium-high so the apples turn a crispy red. 
  7. Put everything on a plate, and drizzle with honey! Lovely.
