Ingredients:
- 5-6 large tomatoes
- 3 cloves finely chopped garlic
- 2 tablespoons Olive Oil
- basil, oregano (fresh or dried)
- salt and pepper to taste
- Put water in a teapot to boil. While the water boils, wash your tomatoes and make a cross on their skin. Pour the boiling water on your tomatoes, and let them stand for a couple of minutes. By doing this, you basically undress your tomatoes.
- In a medium saucepan simmer the garlic with the olive oil over medium heat.
- Now peel the tomatoes, and roughly chop them in with the garlic and olive oil in the sauce pan. Increase the heat. Stirring frequently, cook until tomatoes are sauce-like. You can leave it chunky, or cook longer, for a thicker sauce.
- Add your spices, and that's it!
Pour this sauce over Eggplant Parm, use it as sauce for Home made Pizza, or pour over pasta, for a fresh alternative to the store-bought tomato sauces. Experiment with different spices and quantities. For pasta sauce I like to add onions as well (step 2), and I substitute basil for sage. You can also stir in grated Parmesan cheese (step4), for a thicker, more rich sauce. Whatever you do, have fun with it!
Why make this at home, instead of buy it by the can? Simple: because at least you know exactly what you put in it. It is healthier because there will be no preservatives, just fresh ingredients. Garlic is a natural antibiotic (like onions) and so it is important for a healthy immune system. Tomatoes are a good source of iron, calcium, potassium, vitamin A, vitamin C, and antioxidants. Refer to the vitamins and minerals page for details on why these are good for you!
