Eggplant Parm



Ingredients: 

  • 1 eggplant
  • about 3/4 cup oil for frying (vegetable oil, or olive oil if you'd like)
  • tomato sauce, like this one
  • grated Parmesan cheese
  • shredded Mozzarella cheese
  • at least 1 cup flour
  • 2-3 eggs beaten
  • at least 1 cup breadcrumbs
  • pasta of your choice

  1. Prepare your eggplant: wash skin thoroughly, dry, and cut into 
  2. 1/4 inch to 1/2 inch slices. put in a bowl, and lightly salt. You want to get out some of the water, so it won't be too soggy. Set aside for about 20 minutes. While waiting, you can make your own tomato sauce
  3. Once you see that your eggplant slices have started sweating, pat dry, and get ready to fry! 
  4. Set your frying station: from left to right, have the breadcrumbs, eggs, flour, and the eggplant. In a pan heat up your oil in the oven, to around 200C=390F. Start coating your eggplants, starting with the flour, then eggs, and then with the breadcrumbs. Put in the pan, and send it in the oven. I like doing it in the oven because this way the whole house won't smell of oil. Fry each slice until both sides are golden brown, then put on paper towels and let cool. 
  5. Cook the pasta of your choice, al dente, and drain. Meanwhile, you can wash the dirty dishes, so you don't have to worry about as much after you're done cooking. 
  6. In an oven-safe dish pile the pasta, 2/3rd of the sauce, fried eggplant, remaining of sauce, and both cheeses. Send it in the oven, and bake at 200C=390F until cheese starts bubbling with joy, around 10 minutes. Serve while still hot. Enjoy your masterpiece!

The star of this dish is the eggplant, obviously. Eggplants are low in calories and fat, but high in fiber content. They are a good source of Vitamins B1, B3, B5, B6, Minerals like manganese, copper, iron and potassium. Unless damaged, don't remove the skin, as many of the vegetable's most important nutrients are right below the skin.
