Pickled Zucchini Ribbons



Ingredients: 

  • 1 Zucchini
  • 3 teaspoons sugar
  • salt and pepper to taste
  • 3 tablespoons Extra Virgin Olive Oil 
  • 2 tablespoons Apple Cider Vinegar
  • 1/2 teaspoon turmeric




To get you in the happy cooking mood, here's a song I thought fit here well, since zucchini was basically made for pickling. Now start cookin' , good lookin'! 


  1. Get your zucchini ready: wash skin thoroughly, dry, and with a potato peeler slice into ribbons. 
  2. In a bowl, combine sugar, olive oil, and vinegar. 
  3. Gently add your zucchini ribbons to the bowl, and mix. 
  4. Add turmeric, to give it an extra boost of flavor, and a rich, vibrant color. Salt and pepper to taste. 

Why is this good for you? For starters, it will make your tummy feel great. Apple cider vinegar is especially healthy for you, it is a wonderful home-remedy. It is good for (among many other things) fighting acne, acid reflux, high cholesterol, a bad hangover (trust me), and fatigue. Second, zucchini is another good source of dietary fiber, potassium, manganese, zinc, and iron, and vitamins A, B-complex, and C. Since in this case you're basically eating the zucchini raw, your body can benefit even more from all of these nutrients
