Hungarian Rice Cake ~ Rizskó




Ingredients: 
  • 1 L milk (a little more than 4 cups) 
  • 2 cups white rice
  • 5 large eggs, whites and yolk separated
  • 50 grams of butter (about one stick)
  • 6 tablespoons granulated sugar
  • 1+1 teaspoon vanilla extract
  • 2 teaspoons lemon juice

First and foremost, find your 'happy'! Here's a little help . Who doesn't love the 90's?? :) 

  1. Cook your rice in the milk until tender. Add a pinch of salt, a pinch of sugar, and a teaspoon of vanilla extract. When done, set aside, and let cool, stirring occasionally, so your rice doesn't dry out. 
  2. Once the rice has relatively cooled down, preheat your oven to 340F (170C)
  3. In a mixer combine egg yolks, butter, sugar, lemon juice, and remaining vanilla extract. Mix until light and fluffy. 
  4. Beat the egg whites until firm. You can add a pinch of salt to it, it can make it easier. 
  5. With a spatula mix together well the rice and the buttery-sugary mixture. Make sure there are no balls of rice stuck together. 
  6. Now gently mix in the egg whites. 
  7. Pour the mixture in a greased and then floured pan, and send it in the oven! 
  8. After about an hour, when the top of your cake is golden brown, check with a sharp knife if it is done yet (stab it in the middle, and if it comes out fairly dry, it's ready). 
  9. Serve cold or warm, with jam or chocolate syrup, or with a spoon of vanilla ice cream. Enjoy! :)

  1. I tried this finally! It turned out really good but of course I forgot to beat the yolks/whites separately. Still it was nice and fluffy. Also, I don't like raisins so I used cranberries-turned out fantastic!! Thanks for posting it.
