Tomato Sauce



Ingredients:

  • 5-6 large tomatoes
  • 3 cloves finely chopped garlic
  • 2 tablespoons Olive Oil
  • basil, oregano (fresh or dried)
  • salt and pepper to taste








To get you in the mood, here's a short playlist. Now start cookin', good lookin'! 
  1. Put water in a teapot to boil. While the water boils, wash your tomatoes and make a cross on their skin. Pour the boiling water on your tomatoes, and let them stand for a couple of minutes. By doing this, you basically undress your tomatoes. 
  2. In a medium saucepan simmer the garlic with the olive oil over medium heat. 
  3.  Now peel the tomatoes, and roughly chop them in with the garlic and olive oil in the sauce pan. Increase the heat. Stirring frequently, cook until tomatoes are sauce-like. You can leave it chunky, or cook longer, for a thicker sauce. 
  4. Add your spices, and that's it! 
Pour this sauce over Eggplant Parm, use it as sauce for Home made Pizza, or pour over pasta, for a fresh alternative to the store-bought tomato sauces. Experiment with different spices and quantities. For pasta sauce I like to add onions as well (step 2), and I substitute basil for sage. You can also stir in grated Parmesan cheese (step4), for a thicker, more rich sauce. Whatever you do, have fun with it

Why make this at home, instead of buy it by the can? Simple: because at least you know exactly what you put  in it. It is healthier because there will be no preservatives, just fresh ingredients. Garlic is a natural antibiotic (like onions) and so it is important for a healthy immune system. Tomatoes are a good source of iron, calcium, potassium, vitamin A, vitamin C, and antioxidants.
