Creamy Peach Soup



Ingredients (for 2)*: 

  • ~140 gramms of peaches, peeled and diced 
  • ~170 gramms apricots, peeled and diced
  • 40 gramms sugar 
  • 1 dl water
  • 1,5 dl plain yogurt 





Add a Pinch of Pixidust, a smile, and 90F weather, and you're set! :)

  1. Put fruit, sugar and water in a pan, and slowly bring to a boil, stirring often. 
  2. Let boil for a couple minutes, then set aside and cool.
  3. Put in blender, and pulse until completely smooth. 
  4. In a bowl mix a couple tablespoons of the soup with one third of the yogurt, and mix well. Add more soup, and all of the yogurt. Mix well, making sure its not lumpy, then mix with the soup completely. 
  5. Put in fridge for 2-3 hours or until ready to eat. Serve with whipped cream... yummm

Make this soup with many other types of fruits.. cherries, kiwi, strawberries... Use less or more sugar, none at all, with honey, whatever you please. Add spices, less yogurt, swap yogurt for sour cream for a tangy kick, or cream if you like it thicker.  

* These ingredients are for the soup that I made. The measurements are not exact. You can use around 1-1 cup of each fruit.
