- 1 eggplant
- about 3/4 cup oil for frying (vegetable oil, or olive oil if you'd like)
- tomato sauce, like this one
- grated Parmesan cheese
- shredded Mozzarella cheese
- at least 1 cup flour
- 2-3 eggs beaten
- at least 1 cup breadcrumbs
- pasta of your choice

Tomato Sauce
Ingredients:
- 5-6 large tomatoes
- 3 cloves finely chopped garlic
- 2 tablespoons Olive Oil
- basil, oregano (fresh or dried)
- salt and pepper to taste
