Healthy-Yummy summer sandwich

Ingredients (for 1): 

  • 2 slices of your favorite bread
  • 1 egg
  • 1/2 ripe avocado 
  • small handful of fresh basil leaves
  • 1 tomato
  • 1 ball mozzarella (100 gr/3.5 oz)
  • salt and pepper to taste



Ingredients ready? Just add a Pinch of Pixidust By the time the song ends, your sandwich will be ready to eat :) 


  1. Mash the avocado with a fork, and add a pinch of salt if you like. Spread avocado cream on bread. 
  2. Arrange tomato slices on one slice, then pile on mozzarella slices as well.
  3. Fry the egg, however you like, and slide it on top of the mozzarella. 
  4. Tear up basil leaves, and add to your sandwich. Press the bread slices together, and put in 300F/150C oven for 5/7 minutes, just to let the cheese melt a little. 

Yumm yumm yumm... this is such a filling sandwich! Great for breakfast, or for a summer snack.
