- 2 cups chickpeas, cooked +cooking water (or liquid from the can)
- 3 cloves of garlic
- juice of 1 lime or lemon
- 2 tbsp olive oil
- 1 tbsp sesame seed oil
- salt and pepper to taste
Hummus. Just add pinch of Pixidust (and your favorite topping).
- Put chickpeas, garlic, lemon/lime juice, olive oil, and sesame seed oil in a blender, and pulse until creamy.
- Taste, and add salt and pepper to taste. If you find it too thick, add some water leftover from cooking, or from the can.
- DONE!
That's your basic hummus recipe. To spice it up, add fried garlic, chopped capers or olives, sun-dried tomatoes, tabasco sauce, lemon zest, parsley, a tbsp of peanut butter, whatever comes to mind!! Experiment. It's so good. Once you have it, there's no saying goodbye to this lovely dip.
As a good source of fiber, chickpeas can help lower cholesterol and improve blood sugar levels. This makes them a great food especially for diabetics and insulin-resistant individuals.
