Hummus

Ingredients: 

  • 2 cups chickpeas, cooked +cooking water (or liquid from the can)
  • 3 cloves of garlic
  • juice of 1 lime or lemon
  • 2 tbsp olive oil
  • 1 tbsp sesame seed oil
  • salt and pepper to taste




Hummus. Just add  pinch of Pixidust (and your favorite topping).   

  1. Put chickpeas, garlic, lemon/lime juice, olive oil, and sesame seed oil in a blender, and pulse until creamy. 
  2. Taste, and add salt and pepper to taste. If you find it too thick, add some water leftover from cooking, or from the can. 
  3. DONE! 
That's your basic hummus recipe. To spice it up, add fried garlic, chopped capers or olives, sun-dried tomatoes, tabasco sauce, lemon zest, parsley, a tbsp of peanut butter, whatever comes to mind!! Experiment. It's so good. Once you have it, there's no saying goodbye to this lovely dip. 

As a good source of fiber, chickpeas can help lower cholesterol and improve blood sugar levels.  This makes them a great food especially for diabetics and insulin-resistant individuals.
